I tried to replicate the Chuy's "Salsa Fresca" recipe because
I love it so much.
Spicy and Citrusy.I think the key to their recipe
is a little vinegar. Needless to say I was really
happy with how it turned out and I pretty much
ate the whole bowl. It was mostly vegetables!!! So it's okay... 
 


Baked Chicken Zucchini and Pasta casserole.
I was inspired to make this when I saw a picture of a similar
dish to this one in a magazine. It looked really yummy.
I didn't have everything to make the recipe I had found but had
my creative mind.
So....I skimmed through my pantry and had zucchini,
ground chicken, little tiny pastas and mozzarella.
This is what I came up with. It is layered with cream,
butter and red onions (I didn't say it was the healthiest dish).
The casserole came out better then I thought it would. I was crossing
my fingers that I didn't just make a dish that was going to taste
dry and flavorless. It is so good that I have made it twice since.  




All the fresh fruits and veggies I just picked up from my local mom and pop produce market.
I love to shop local. Eat local and try to eat as much natural organic foods that I can.
I wasn't raised on the most healthy of diets. I was taught to make chicken fried steak and
biscuits and gravy from scratch.
My awareness for my health and body have been growing over the past 5 years of my life
and I have been slowly transitioning and changing my eating habits and views on food.
Once you see how everything works in harmony to fuel your body into a machine-like being
that is capable of the most extraordinary things, you can see how important everything
you put into your body is and how detrimental some things you put into your body can be.
It is all about Awareness, education and an Open Minded Approach.
Banana, Blueberry & Strawberry Smoothies
I'm a smoothie drinking fool. I love making use of leftover
fruit by experimenting with different flavor smoothies.
Easy to make. Good for you and easy for your body to digest!
You can't go wrong. Make whatever kind sounds good.  


I enjoy a good party and I enjoy hosting a good party.
First rule of a good party...
Have a selection of bar drinks, liquors, fruits and mixers to make
sure that everyone has something they like to drink.
A good host makes sure that everyone always has a drink in their hand.
And one in theirs too...

Tequila & lime marinated shrimp in a corn tortilla with tomatoes,
cilantro, avocados, red onion, rice and black beans. A delicious and healthy meal.
Skipping out on the flour tortillas alone will save you a lot of calories.
Add in all the veggies and protein from the beans and shrimp
 and you have a very light and fulfilling meal packed with tons of flavor.
You certainly won't be missing anything in this dish.
